Rib Lamb Chops or Rack of Lamb
Each rack of lamb serves 2-3 people. These weight 2-1/2-3lbs. Preheat your oven at 450 degrees. While waiting to get to temperature, pan sear your rack fat down in a skillet and finish in the oven fat side up for 12-15 minutes. If your skillet is not oven ready, transfer to a roasting pan.
